- Vinegar essence: Has the highest concentration of pure acetic acid, usually about 70-80%. Requires dilution before use in cooking.
- Table vinegar: The most common type of vinegar used in household cooking. Concentration usually ranges from 5% to 9%.
- Low concentration vinegar: Usually less than 5%, used less frequently and in specialized recipes.
- Acidic solutions for canning: Concentration about 10-12%, used for long-term food storage.

How to Decrease Vinegar Concentration (How to Dilute Vinegar)?
To decrease vinegar concentration, you need to dilute it with water. For example, to turn 70% vinegar essence into 9% vinegar, you need to enter the corresponding data into the calculator form or use the following formula:
- Determine the volume of vinegar essence: Decide how much 9% vinegar you want to obtain. For example, let it be 100 ml (3.4 fl oz).
- Use the dilution formula: C1×V1=C2×V2 where:
- C1=70% — initial vinegar concentration,
- V1 — volume of vinegar essence
- C2=9% — final vinegar concentration,
- V2 — final solution volume.
- Determine the volume of vinegar essence (V1):
- 70%×V1=9%×100 ml
- V1=9*100/70
- V1=900/70
- V1≈12.86 ml
Consequently, you'll need about 12.86 ml of 70% vinegar essence and 87.14 ml of water to obtain 100 ml of 9% vinegar.
How to Increase Vinegar Concentration?
You can increase vinegar concentration by adding vinegar essence or another vinegar with a higher concentration.
If you don't have a product with a higher acid concentration, it's impossible to increase the vinegar concentration percentage from 6 to 9 at home.
Fortunately, for most recipes, we don't use pure vinegar, but its solution with water. Therefore, to prepare a marinade, brine, or dressing with a certain acidity level, we just need to change the ratio of vinegar to water in the recipe.
For example, you need to prepare a brine from 1 liter of water and 50 ml of 9% vinegar, but you only have 6% vinegar. So, we need to calculate how much 6% vinegar we need. To do this:
- Determine the amount of acetic acid in 50 ml of 9% vinegar:
50 ml×0.09=4.5 ml
- Find out how much 6% vinegar is needed to achieve 4.5 ml of acetic acid:
- V×0.06=4.5 ml
- V=4.5/0.06=75 ml
To obtain a solution with the same acidity, you need to take 75 ml of 6% vinegar while reducing the amount of water to 925 ml.
