Make these homemade cheese biscuits for your appetizer. These shortbread-like savory bites are very simple to prepare, crispy, and made with just 4 ingredients. They're crunchy, cheesy, flavorful, and will be a good addition to beer or dry red wine! It takes only 5 minutes to mix the dough and 15 minutes to bake, with the rest of the time spent chilling the dough in the refrigerator. So this recipe can safely be classified as quick baking.

You can shape the biscuits in any way that's convenient for you. Personally, I prefer a shape that resembles pieces of cheese.

For the dough

  • 1 cup Cheddar Cheese Emmental or Gruyère (100 g)
  • 7 tbsp Unsalted butter (100 g)
  • 1 cup All-purpose flour (120 g)
  • 1 Egg yolks
  • 2 pinch Salt

Additional

  • 3 pinch Paprika

Cheese Biscuits Recipe

  1. Grated cheese, a stick of butter, and an egg yolk in the bowl

    Grate the cheese using a medium grater, add softened butter, egg yolk, and salt to taste.

    It's best to adjust the amount of salt based on the flavor profile of the cheese you've chosen.

  2. Mix everything well and add flour

    Mix the butter and cheese mixture thoroughly and add sifted flour to it.

    Depending on the characteristics and quality of the flour, you may need anywhere from 3/4 cup to 1 1/4 cups (100 to 150 grams) of flour. I recommend starting with 3/4 cup (100 grams), and if the dough remains sticky, gradually add the rest.

  3. Kneading the dough

    Knead the dough until it's soft and not sticky. There's no need to overwork the dough with flour.

  4. Divide the dough into two parts

    Divide the dough into two equal parts. Roll each into a ball and wrap in plastic wrap, place in a plastic bag, or between two pieces of parchment paper. Refrigerate the dough for 30-60 minutes. I put mine in the freezer compartment for 20 minutes.

    It's better to slightly flatten the balls; this will make them easier to roll out with a rolling pin.

  5. Roll out the dough into a flatbread

    Take the chilled dough out of the refrigerator and roll it into a round, fairly thin flatbread. My flatbread is approximately 1/5 inch (0.5 cm) thick.

    The dough is very convenient to roll out between two sheets of parchment paper. If you're rolling it out directly on the table, dust the table with flour.

    Preheat the oven to 350°F (180°C).

  6. Divide dough into segments

    Slice the dough into pieces and, if desired, trim the uneven edges. It's easiest to do this with a pizza cutter.

    You can shape the biscuits in any way that's convenient for you. For example, you could slice them into strips.

  7. Cut out holes in dough to imitate cheese

    Remove the trimmings and cut out holes that will imitate cheese. The holes can be any size; in my opinion, a mix of large and small ones looks most impressive.

    To cut out the holes, I used two sides of a round piping tip. Instead, you could use a bottle cap, straws, an empty pen barrel, or other handy tools.

  8. Sprinkle the biscuits with paprika

    Sprinkle the prepared biscuits with sweet paprika, cumin, rosemary, grated cheese, sesame seeds, flax seeds, sunflower seeds, nuts, or any other spices and add-ins to your taste.

    I'm using sweet paprika.

  9. Transfer the biscuits to a baking sheet

    Transfer the prepared cheese biscuits onto a baking sheet lined with parchment paper.

    Move them carefully, as by this time the dough has likely thawed a bit, becoming softer and more fragile. I used a spatula to transfer the dough.

  10. Bake the shortbread biscuits for 10-15 minutes

    Place the baking sheet in the preheated oven at 350°F (180°C) and bake the biscuits until lightly golden, for about 10-15 minutes.

    The biscuits bake very quickly, and every oven has its own quirks, so keep an eye on them to prevent burning. Then transfer to racks to cool completely.

  11. French cheese biscuits

    The French cheese biscuits with paprika are ready. These cheese biscuits are crispy, crumbly, and break apart quite easily.

    You can serve these delicious treats with coffee, tea, or milk, and for those who prefer something stronger - with beer or wine.
